In the United States, corned beef and cabbage is viewed as a quintessentially Irish staple. It's fair to ask, is corned beef and cabbage popular in Ireland. First off, what is corned beef? In the US corned beef usually refers to beef (brisket) that is cured in brine–often seasoned brine. In Ireland, corned beef is usually a canned product consisting of finely chopped meat seasoned with salt, sugar and preservatives. So, is corned beef and cabbage Irish? The answer is no. While bacon and cabbage is a well known combination in Ireland, corned beef is not. Corned beef and cabbage as a meal is, most likely, an American invention. Chances are that corned beef was substituted for the more expensive bacon in the late 18th or early 19th century. Just like in Europe, corned beef is actually a Jewish delicacy. In New York, the Jewish and Irish communities lived in close proximity. The Irish probably got the idea of substituting corned beef for pricey bacon from their Jewish neighbors. It's likely that this bacon substitute first occurred in the Big Apple and spread throughout the Irish community in the United States. Corned beef and cabbage may actually be one of the earliest examples of Asian fusion cuisine!!
